Grammy Barb’s Scalloped Potatoes

6 medium potatoes (red is best)
1 t salt
¼ t pepper
¼ t paprika
1 med onion thinly sliced
Butter
1 pint whipping cream (** better**)
or 1 (13 oz) can evaporated milk

Wash potatoes, cover with water in a saucepan and boil in their skins until half done using high heat.
When a fork goes in easily they are done (you don’t want squashy).
Drain, cool, and peel potatoes.
Cut into ¼ inch slices.
Put in layers in a buttered 1 ½ qt casserole dish.
Sprinkle each layer with salt, pepper, paprika, and onion.
Dot with butter.
Cover with whipping cream.

Bake at 350º for 45 min – 1 hr.
(until top layer is golden)




Grammy Barb’s Sweet Potato Casserole

3 c cooked mashed sweet potatoes
1 c sugar
3 eggs
1 t. vanilla
½ c milk
¼ c butter
dash of salt

Combine all ingredients and beat at medium speed until smooth.
Spoon into a greased shallow 2 qt casserole dish.

Topping:
1 c brown sugar
½ c flour
1 c chopped nuts (pecans)
1/3 c melted margarine

Combine topping ingredients. Sprinkle over top of mixture.
Bake a 350º for 35-40 min.
